Here is the recipe for the Porridge Muffins that featured in the girls Muffin Tin morning tea yesterday:
Ingredients:
1 cup cooked porridge
2 cups Self Raising flour
3 tablespoons Sugar
1/2 cup Milk
2 eggs
3 tablespoons butter, melted. (or marg)
Mix it all together! (It will still be lumpy from the porridge)
Divide into greased or papered muffin trays.
Cook at 180 c, for 20-30 mins.
Makes at least 12! (or a heap of little ones!!)

Yummy! And such a good breakfast option too. I made similar ones last night, but used quick oats and threw in a heap of sultanas.
